Generally, light soy sauce is made with a high salt content and finished in a short period of time to make the color as light as possible.  However, Katagami light soy sauce is made for the color to be within range of light soy sauce while maximizing the umami.  As a result, this light soy sauce can be used not only for cooking but also for directly pouring over food such as silken tofu.
