HALIYO
The city of Kaizu in Japan’s Gifu Prefecture, where HALIYO’s brewery is situated, is an area that has been well known since ancient times for its production of fuyu kakis. Fuyu kakis are a variety of persimmons unique to Japan and with a high sugar content. Carefully grown by the farmers of this region, only fully ripened fruit is chosen for vinegar production. The fruit ferments over two years, without any added water.
Kakis are so rich in nutrients that there is an old Japanese saying: “The doctors turn blue when the kakis turn red.”
