Brand - MITSURU SHOYU
It is a pure soy sauce made with fresh moromi, just passed through the end of summer. Moromi is the state of fermentation when ingredients have broken down and reached a thicker consistency. This is combined with homemade amazake (malted rice) to create a light-colored and richly flavored soy sauce.
For the dishes where you want to keep the color and flavor of the ingredients, this light say sauce will create a brightly colored finish.
